For normal water crossing (i.e. water up to hood), no need to extend the exhaust as the pressure of air coming out of the exhaust will keep the water from getting into the engine. You just need to ensure that all electrical components are well insulated and breather hoses for transfer cases and gear box are extended. A diesel engine is a big plus for that.

My car has a petrol and the snorkel is for a completely different reason. Normal air intake is above the front left fender. Driving for long distances in the desert especially behind another car will get the air filter clogged quickly. Using a snorkel, you get cleaner air from a higher point thus eliminating the need to frequently clean the air filter. If I ever have to do deep water crossing in an emergency, I could technically but I will get water in my gears (since I did not extent breather hoses) and will probably fry some of the electronics\electrical components but in theory the engine would still be running.
